Tatale
Tatale is a popular Ghanaian savoury pancake made from mashed overripe plantains, flour, and spices like ginger and onion. Fried until golden brown and crispy, often in palm oil, it is a staple, nutrient-rich dish usually served with Bambara beans (Aboboi), groundnut or roasted corn flour.
Ingredients:
Overripe plantains (for sweetness), flour (for binding), onions, ginger, hot peppers and salt. Some recipes add roasted corn flour for extra flavour.
Cooking Methods:
Mash the plantains, blend the spices, mix everything with flour to form a batter, and shallow fry in palm oil or vegetable oil. It is traditionally served with Aboboi (stewed Bambara beans), which balances the sweetness of the plantain with savoury, or groundnut.
