Mpotompoto

Mpotompoto is a popular, nutritious Ghanaian one-pot comfort food, often called yam or cocoyam pottage, featuring boiled, thick, and starchy root vegetables mashed in a savoury sauce. It is commonly cooked with palm oil, smoked fish, onions, tomatoes, and peppers, offering a smoky flavour and a thick, porridge-like consistency.

Ingredients:

The base is usually yam, cocoyam, sweet potatoes, or even plantain, palm oil (or Zomi), pepper, salt, onions and smoked fish.

Cooking Method:

Wash, peel, and cut cocoyam into out and boil for 5 minutes. Grind tomatoes, pepper and other spices and add to the cocoyam on fire and allow to cook. Add a bit of palm oil and stir. Leave to cook for 6-7 minutes and serve.
